Artichoke has gained massive popularity in the recent years, thanks to its potent medicinal properties.
Scientifically known as Helianthus tuberosus, this plant is also referred to as wild potato since it is similar to the actual potato.
Both, the leaves and roots of the artichoke are used as a medicine. It boasts a very low caloric value and is effective in the fight against excess weight. Likewise, it is beneficial for individuals suffering from the intestinal flora issues, thanks to its high content fo fiber.
Artichoke is loaded with minerals and vitamins
It has an abundance of potassium, which controls blood pressure, promotes the efficient functioning of the heart and muscles, regulates water in the body as well as transmission of nerve impulses and phosphorus, which contributes to healthy teeth and bones.
Likewise, it’s packed with inulin, which doesn’t result in high levels of insulin and sugar in the blood. In fact, the artichoke is a great food for diabetics.
The wild potato also contains magnesium, calcium, iron, vitamin C, provitamin A, vitamin B complex, and vitamin D. It’s an excellent source of essential amino acids.
While it is best to use artichokes raw, you can also use them baked or boiled. Moreover, you can use them as a supplement to other foods, like baked or boiled potatoes.
HOW to prepare Artichokes Soup
What you need:
- 4 tubers of artichokes,
- A root of parsley with leaves,
- 2 carrots,
- 150 grams of boiled potatoes
- 3 tablespoons of olive oil,
- 1 tablespoon of gluten-free flour,
Chop your parsley and carrots into small pieces before frying them in olive oil.
Once browned, add flour and one litre of salted water. In the meantime, peel the artichokes, chop them into small cubes and add the other vegetables. Once your artichokes become soft, add your potatoes cut into cubes. Stir well and garnish with chopped parsley leaves.
How to prepare Artichokes salad
What you need:
- 0.5 kg of apples,
- 0.5 kg of artichokes,
- Olive oil,
- Juice of one orange.
Grate your apples and artichokes after peeling them. Then, pour a spoon of olive oil and orange juice. Mix well.
